Confidentiality comes first
Client documents are privileged, so ask where files are stored, who can access them and whether they are used to train anything. If nothing should leave the machine, ask the vendor in writing whether local processing is possible. Check jurisdiction too: a tool tuned to one legal system can sound confident about rules that do not apply where you practise. Test it on a contract you have already reviewed and compare notes.
